Sheet pan fajitas
DIRECTIONS:
- Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- In a large bowl, combine 2 tsp chili powder, 2 tsp cumin, 2 tsp oregano, 1 tsp paprika, 1 1/4 teaspoons salt and 1 1/4 teaspoons pepper.
- Add 3 tsp minced garlic and 3 Tbsp olive oil. Stir.
- Place 1.5 lbs thinly sliced chicken, 3 sliced bell peppers, and 1 sliced onion in bowl. Gently toss to combine.
- Spread in a single layer onto the prepared baking
- Place into oven and bake for 25 minutes, or until the chicken is completely cooked through and the vegetables are crisp-tender. Stir in cilantro and 2 tbsp lime juice.
- Serve immediately with tortillas, pico, and guacamole.
