roasted vegetables

This recipe is from my sister-in-law Reina.

1/2 cup broccoli
1/2 cup carrots
1/2 onion
1 zucchini
1 squash
8 mushrooms
1/4 cabbage
2-4 Tbsp olive oil
1/2 tsp salt
3-5 cloves garlic (don't chop)
fresh herbs (rosemary, oregano, basil, etc)

Coat vegetables, garlic, and herbs with olive oil.  In a 9 by 13 pan, bake at 425 degrees for 10 minutes.  Stir and add salt.  Return to oven for 10 more minutes.  Serve.
